kitchari

Kitchari is a beloved cleansing food in Ayurveda. It is a complete tridoshic meal, meaning it brings balance to all doshas, and has the ability to nourish and detoxify the GI tract if taken properly. Below is my favorite recipe:

KITCHARI (makes 4 servings)
1/2 cup organic split or sprouted mung beans
1/2 cup white basmati rice
2 cups of chopped organic vegetables— carrot and cauliflower is my favorite tridoshic combo
4-6 cups bone or veggie broth— clean water is great, too!
1 tbsp ghee
1 tbsp ground turmeric
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp fresh minced ginger
1/2 tsp mustard seeds
Sea salt to taste
Cilantro and lime for garnish

* Combine the mung beans and basmati rice and let them soak overnight or at least for a few hours before cooking for better digestibility. Drain the water they soaked in before cooking*

Process:

1. Heat the ghee in a pot over a medium-high flame and add the mustard seeds until they pop, then add the rest of the spices until they release their aroma which takes about 30 seconds

2. Add the mung beans, rice and your veggies and give it a nice stir to coat everything with the ghee and spices

3. Pour in enough liquid (water or broth) to really cover everything, it will look soupy, and bring to a boil for 5 minutes, add a generous pinch of sea salt and stir again

4. Cover and simmer for 20-30 minutes until everything is tender

5. Plate and garnish with chopped cilantro and lime wedges
